TAIPEI, Taiwan – A little gem of an island, Taiwan is the ultimate food destination for Asian cuisine. As for the locals, everyone is extremely friendly and helpful. Taiwan is a far less severe a culture shock than China. The Taiwanese have a sense of personal space, and people actually form neat lines while awaiting subway trains. And if you're not a foodie, there are temples, mountains, natural wonders, and hot spring spas to keep you occupied. This food tour centers on Taipei and the nearby highlights, but the food tips apply to the entire island.

A trip to Taiwan isn't complete without a visit to one of its famous night markets. Here's a food tour of five Taiwan night markets near the Taipei area.

SHILIN NIGHT MARKET

The market emerged in the beginning of the 19th century near a temple. In 1915, Japanese colonists constructed a little brick house and it was used as a day market to sell seafood, meat, fruit, and vegetables.

Although a bit far off from Taipei's center, Keelung has a very large food selection and plenty of seafood because of its proximity to the harbor.

RAOHE NIGHT MARKET

Raohe is one of the oldest night markets in Taipei with one of the best food selections around.

HUAXI NIGHT MARKET, A.K.A. SNAKE ALLEY

The food highlight, though, would probably be the snakes. They are served plain or in soup, medicine, or wine. For those not too into the creepy crawlers, Huaxi had some of the best shaved ice I've ever tried.

Tonghua is a smaller night market than others and a great place to go if you're getting sick of the crowded foot traffic.

Taiwan may be a small island, but its eating habits have been shaped by a fascinating history of settlement, colonisation and immigration. 

Taipei is a melting pot of regional Chinese cuisines, with a bias towards the refined cooking of Shanghai and eastern China.

Most famously, the international Din Tai Fung chain , specialises in what westerners call "Shanghai soup dumplings" and locals "xiaolong". 

Pick up one of the twirly dumplings, rupture its side with a chopstick and let the exquisite juices flow on to your spoon before you eat.
